Recipe : Saute Leeks in clarified butter until they retain a shine and are somewhat translucent. Deglaze with lamb stock and add herbs in a bouquet garnet.
When it comes to a simmer whisk in the cream. Leave for 1 minute then slowly whisk in your wool slowly as to prevent clumps. When this is done you are nearly there. Remove bouquet and garnish with mini Black sheep and season to taste!
